From the beginning of our existence we have fed our bodies with food and for most of those centuries, the food was good and healthy and many of the “modern” diseases weren’t an issue. People died more frequently from accidents than from heart disease or stroke.
Today we have too many food options and the perception of too little time to cook properly. These have combined to cause us many chronic health problems and diseases. A healthy, nutritious diet can reverse many of these and help prevent future problems.
For instance, Sir Richard Doll, one of Britain’s top medical scientists, claims that 90 percent of all cancers are caused by what we eat, drink, and breathe. Even the most conservative cancer experts say that at least 75 percent of cancers are associated with environmental and lifestyle factors. Patrick Holford in The New Optimum Nutrition Diet says that heart disease is, in most cases, completely preventable.
Your choices are clear: fast foods, processed foods, foods with unrecognizable ingredients; or clean, nutritious, whole vegetables, fruits, grains, legumes, proteins, and fats that promote good health.
I want to help you achieve a healthy and flavorful diet through my knowledge of Holistic Nutrition, food growing, smart shopping, meal planning, and, finally my favorite activity, cooking.
Healthy eating begins with having the right tools:
The number one tool is the desire for you and your family to eat well.
The second tool is good information including nutrient guidelines, cookbooks, personal nutrition guidance, and meal planning, when needed.
The third tool is the knowledge of where real food may be acquired, including grocery shopping and, quite possibly, how to grow it yourself.
The fourth tool is your kitchen, well-equipped, organized, and ready for action.
The fifth tool is to relax and learn to eat mindfully. Meal planning and preparation should be a creative fun time that is shared by the whole family. And, the meal should be enjoyed together at the table. Mindful eating makes happy and healthy bodies and enduring family relationships.
As a Food Coach, I work with what I call Prime Foods. These are the foods that actually feed your entire body: cells, organs, tissues, and bones, not just your mouth and stomach. You are providing a steady energy level and a sense of all-around well being with the food you eat. The food becomes you! It really is true, you are what you eat! Think about all the food that is destined to become your heart, brain, and lungs. Which would you rather create your body from: a greasy doughnut, a tub of fried chicken, and a bag of salty fries; or a crisp juicy apple, a sweet potato, and a fresh garden salad. For this reason we think of them as Prime Foods, those most important food that should be your principal foods from which to create your body.
